Eggplant cooked in olive oil and layered with buffalo mozzarella, parmesan and a tomato, oregano, basil sauce, and seasoned breadcrumbs. Serve with baguette or Pane Francese sourdough or pasta and a garden salad, or as a side to meat or fish.
Ready to heat take home meal. Serves 2 or up to 4 as a side. Freezes well.
