This is a lovely red and green salad for the festive table. The vegetables are lovely oven baked or you could grill the vegetables on the BBQ. Light, creamy mousse-like concoctions with strongly flavoured fruit purées and a biscuit on the side.  Ingredients 600g blackberries, fresh or frozen 150g caster sugar 300ml fresh pure cream 200ml plain Greek yoghurt 1 Tbsp lemon juice Finely shredded mint leaves Phillippa’s Butter Shortbread, bought or freshly baked following the recipe in Phillippa’s Home Baking Cook Book Method Put washed blackberries into a non-stick pan, add 1⁄2 the sugar. Ingredients 1 bunch kale, 500g 250g brussel sprouts 3 pears Juice 1 lemon 100g pecorino (or parmesan) cheese, finely grated 1/2 tsp salt & 1/2 tsp pepper Salad dressing 2 tbsp maple syrup 3 tbsp balsamic vinegar 2 tbsp Dijon mustard 3 tbsp olive oil Method Mix the first 3 salad dressing ingredients in a jar until well combined.
